Job description
As part of your internship, you will be attached to the Research or Charcuterie or Catering department and will participate in the study of the impact of raw material and process variability on the quality of finished products, from a sensory, economic, and environmental perspective.
🔬 Your missions
Your missions will include:
Characterizing raw materials, semi-finished products, and finished products regarding their organoleptic properties (color, texture, appearance) and chemical composition (moisture, protein…), using various tools: colorimetry, texture analyzer, desiccator, NIRS, and sensory analysis panel.
Exploiting and analyzing the data collected to study the sensory, environmental, and economic impact of the different unit operations for raw material processing.
Identifying the unit operations that may cause production variability and contributing to the implementation of control charts and good practice documents for better process control.
Analyzing and synthesizing your results, then sharing the knowledge acquired during your internship with experts, technicians, and R&D managers.
