Restaurant Manager

We are seeking an experienced and passionate Restaurant Manager to lead the front-of-house team at a stunning, privately owned coastal castle with an established fine-dining restaurant and busy wedding & events calendar.

Key Responsibilities

• Full responsibility for the day-to-day running of the restaurant (approx. 60–80 covers)
• Leading, training and motivating a team of 15–20 FOH staff
• Delivering exceptional guest experiences in a luxury setting
• Stock control, rotas, GP management and compliance with all licensing, food safety and H&S regulations
• Working closely with the Head Chef on menu development and seasonal changes
• Managing private dining, weddings and exclusive-use events

The Ideal Candidate

• Minimum 3–5 years’ experience as Restaurant Manager or Assistant Manager in a high-quality, fast-paced fine-dining or 4/5-star hotel environment
• Strong leadership skills with a proven track record of building and developing teams
• Excellent wine and cocktail knowledge
• Impeccable grooming and guest-facing standards
• Calm and professional under pressure
• Full fluency in English; additional languages an advantage
• Flexible to work evenings, weekends and bank holidays as required
