Ket Baker is an artisan sourdough bakery on the Bellarine Peninsula known for handcrafted breads, pastries, and 100 percent sourdough croissants. We use organic ingredients, slow fermentation, and traditional methods to create high quality baked goods enjoyed by locals and visitors alike. Our team is passionate about real food, community, and honest craft.

Key Responsibilities

• Checking the cleanliness of equipment and the operation of the premises before production to ensure full compliance with food safety and workplace health standards.
• Checking the quality of raw materials and accurately weighing ingredients
• Kneading, maturing, cutting, moulding, mixing and shaping dough and pastry products in line with Ket Baker’s artisan methods.
• Preparing pastry fillings and maintaining consistency in flavour and texture.
• Monitoring oven temperatures and assessing product appearance to set correct baking times.
• Coordinating the forming, loading, baking, unloading, de-panning and cooling of bread, rolls and pastry batches.
• Glazing buns and pastries and decorating products with cream or icing where required.
• Operating dough rollers, moulders and biscuit cutting equipment.
• Emptying, cleaning and greasing trays, tins and baking equipment to maintain hygiene and workflow.

Qualifications and Experience

• A relevant qualification or at least three years of experience in a similar role
• Minimum two years of baking experience preferred
• Sourdough or pastry experience is an advantage
• Availability to work nights, weekends and school holidays
• Flexible approach to work and strong teamwork attitude
• Positive, can-do mindset and willingness to learn
