Lamian Noodle Chef (Hand-Pulled Noodle Specialist)

We are seeking a skilled and passionate Lamian Noodle Chef to join our culinary team. The ideal candidate has experience hand-pulling noodles and preparing authentic Chinese noodle dishes, with a focus on consistency, speed, and presentation. You will be responsible for producing fresh noodles daily and working as part of a team to deliver high-quality, flavorful dishes that reflect traditional Chinese cooking methods.

• Prepare and hand-pull fresh Lamian (拉面) noodles to order, ensuring consistent texture, thickness, and length
• Make noodle dough daily, following traditional recipes and techniques
• Cook noodles to the proper doneness and prepare them for various menu items (e.g., beef noodle soup, stir-fried noodles)
• Maintain a clean and sanitary workstation, following food safety and hygiene regulations
• Collaborate with the kitchen team to ensure timely service and quality control
• Monitor ingredient stock and assist with inventory management
• Train or assist in training junior kitchen staff in noodle preparation techniques, if needed
• Participate in menu development and recipe improvement as needed
• Uphold a high standard of cleanliness and professionalism at all times
  

Requirements

• Proven experience as a Lamian or hand-pulled noodle chef (minimum 2 years preferred)
• Strong knowledge of dough mixing, kneading, and noodle-pulling techniques
• Ability to work under pressure in a fast-paced kitchen environment
• Passion for traditional Chinese cuisine and culinary arts
• Physical stamina and dexterity to handle repetitive movements and long hours standing
• Basic understanding of food safety and hygiene practices
• Team player with a positive attitude and strong work ethic
• Experience working in a Chinese restaurant or noodle bar
• Familiarity with Lanzhou-style beef noodles or other regional noodle dishes
• Knowledge of traditional Chinese broth and soup preparation techniques
