Kitchen Stagiaire

The Louise Hotel Brussels 5*, the first MGallery hotel in Belgium, is looking for its future kitchen stagiaire.

You will contribute to the smooth running of the service and the quality of production. You will participate in food preparation according to technical sheets. You will establish good relationships with other hotel services. You will ensure the cleanliness of your workplace and food safety by respecting HACCP hygiene rules. You will contribute to the proper management of raw materials.

You want a 360-degree experience? In addition to the restaurant, you may also be able to exercise your talents to ensure services for banquets, room service, or breakfast.

The internship is available now for a duration of 3 to 6 months.

Responsibilities

You will be responsible for:

1. Before the service :

- setting up all hot and cold foods
- cooking meat, fish, and poultry; preparing sauces
- executing preparations for banquets or buffets

2. During the service :

- preparing and finishing dishes according to orders; respecting schedules, recipes, work methods, and organization of work
- arranging and garnishing food on plates and placing it in a bain-marie, respecting portion sizes for different meal components
- ensuring optimal use of raw materials, presentation, taste, and quality

3. After the service :

- clearing the kitchen
- checking and treating leftover food
- ensuring proper storage and conservation of food products
- maintaining order and cleanliness in fridges and freezers
- cleaning the workplace and instruments
- ensuring order, cleanliness, and safety in the kitchen
- respecting safety and hygiene standards
