Hotel Bar and Beverage Manager

We are seeking an experienced and passionate Bar & Beverage Manager with a background in large-scale 4 or 5-star hotels to lead the daily operations of our Senate Bar and Deck Bar. You will be responsible for ensuring world-class guest experiences, driving revenue performance, and leading a dynamic, high-performing bar team. This role requires a hands-on, innovative leader who is equally comfortable engaging with guests as they are managing operations behind the scenes.

• Minimum 3 years’ managerial experience in bar management, ideally in luxury hotels or high-end restaurants

• Degree or diploma in Hospitality Management (advantageous)

• Certification in wine and spirits (essential)

• Strong knowledge of mixology, beverage trends, and responsible alcohol service

• Proven ability to manage budgets, inventory, and cost control effectively

• Proficiency in MS Office, POS, and bar/restaurant management systems

• Excellent communication, leadership, and conflict resolution skills

• Must hold a valid South African ID

• Oversee daily bar operations at the Senate Bar and Deck Bar, ensuring seamless service and a vibrant luxury atmosphere

• Engage warmly with guests, resolve queries promptly, and continuously elevate the bar experience

• Uphold the highest standards of beverage quality, bar hygiene, and compliance with liquor licensing regulations

• Implement effective stock control, manage supplier relationships, and monitor costs to maximise profitability

• Recruit, train, and motivate a high-performing bar team; conduct performance reviews and foster teamwork

• Collaborate with the team to design creative and profitable cocktail and beverage menus reflecting guest preferences and trends

• Monitor sales, track expenses, and implement strategies to achieve budgeted revenue and drive growth

• Partner with marketing to create engaging bar promotions and events that increase guest traffic and revenue

• Support the development of operational SOPs and ensure adherence to hotel standards
