Role overview

Join the team at Sanctuary Lakes Hotel as our Hospitality, Retail and Service Manager and play a key role in delivering outstanding guest experiences. Based in Melbourne’s vibrant western suburbs, you’ll oversee daily operations across our bistro, family dining, sports bar, and function spaces. We’re looking for a passionate leader who thrives in a fast-paced environment, motivates their team, and ensures high standards in both service and retail. Key responsibilities
  • Oversee daily operations across the bistro, sports bar, family dining, and function spaces to ensure seamless service and guest satisfaction
  • Lead, coach, and support a diverse team, fostering a positive and productive work environment
  • Develop and implement service standards in line with company values and industry best practices
  • Manage staff rostering, recruitment, training, and ongoing professional development
  • Monitor and maintain compliance with health, safety, and liquor licensing regulations
  • Manage budgets, monitor financial performance, and drive profitability through effective cost control
  • Handle customer feedback and resolve complaints promptly and professionally
  • Coordinate and execute private events, functions, and promotions to maximise bookings and revenue
  • Build strong relationships with suppliers and ensure timely ordering and stock control
  • Oversee inventory management and ensure optimal stock levels across all departments
  • Collaborate with marketing teams to develop and promote venue offerings
  • Analyse sales reports and adapt strategies to meet business targets
  • Uphold a welcoming atmosphere and ensure exceptional guest experiences
  • Implement and monitor workplace policies and procedures in line with company and legal requirements
  • Contribute to strategic planning and business development initiatives for continuous venue improvement
Qualifications and skills
  • Proven experience (at least 1 year) in hospitality, retail, or service management within a busy venue
  • Strong understanding of Australian hospitality regulations, food safety, and RSA requirements
  • Excellent leadership skills with the ability to motivate and develop diverse teams
  • Demonstrated ability to manage budgets, stock control, and operational costs
  • Outstanding customer service focus and conflict resolution abilities
  • Flexibility to work evenings, weekends, and public holidays as required
  • Proficiency in using POS systems and hospitality management software
  • Relevant qualifications in Hospitality, Business, or a related field (Diploma or higher preferred)
