Head Bartender

We are a renowned, family-run luxury hotel set in a breathtaking rural location, consistently ranked among the best in Ireland. Our intimate property is celebrated for its warm Irish hospitality, exceptional cuisine, and a drinks program that reflects craftsmanship, seasonality, and genuine personality.

We are now seeking an outstanding Head Bartender to lead our small, passionate bar team and elevate an already highly regarded cocktail and spirits offering.

The Role:

• Full creative control of the cocktail list and bar program in collaboration with the Head Chef and Sommelier
• Day-to-day leadership of the bar team, including training, mentoring, and roster management
• Curating and maintaining an exceptional back bar with a focus on Irish whiskey, rare spirits, and low-intervention wines
• Delivering warm, knowledgeable, and unpretentious service to a discerning international clientele
• Managing stock, costings, and supplier relationships
• Contributing to seasonal menu development and special events

The ideal candidate:

• Minimum 5 years’ experience in high-end bars or luxury hotels (Michelin/starred or equivalent standard essential)
• Proven track record of creating and executing original, produce-driven cocktail menus
• Deep knowledge of classic and modern cocktails, spirits (especially Irish whiskey), and wine
• Natural leadership skills with the ability to inspire and develop a small team
• Immaculate personal presentation and genuine warmth – you are a host first and foremost
• Full eligibility to live and work in Ireland
• Flexibility to work evenings, weekends, and split shifts as required in a seasonal business
