Director of Restaurant Rosélys (H/F/D)

Description of the post

• Supervise and coordinate the operations of the restaurant Rosélys and room service : Ensure the smooth running of daily activities, ensuring cleanliness, safety, organization of spaces, and respect for Fairmont standards. Collaborate closely with housekeeping, technical maintenance, reception, and sales to guarantee a seamless experience for each guest.
• Optimize customer experience and ensure exceptional service : Exceed guests' expectations through professional, efficient, and attentive service. Be responsive to client and colleague feedback to continuously improve results (VOG, LQA, employee surveys, etc.). Manage and resolve any issues quickly to maintain high customer satisfaction.
• Manage financial and operational performance of the department : Participate in budgeting, forecasting, and strategic project development. Control labor, food, beverage, and operating costs while developing innovative strategies and promotions to maximize revenue and productivity, in collaboration with internal teams.
• Collaborate on culinary concepts and beverages : Work with the Chef de cuisine and Director of mixology to create and update menus and drink lists, considering market trends, presentation standards, cost, and Ecosur norms. Contribute actively to joint marketing strategies to position the restaurant as a gastronomic reference.
• Lead, develop, and mobilize the team : Participate in recruitment, training, and development of colleagues and managers. Plan schedules according to operational needs, supervise payroll and performance evaluations, while fostering leadership, recognition, and professional development within the team.
