APPRENDISTA PASTICCERE/A

We are looking for an apprentice pastry chef/a to join our historic bar pasticceria in Milan. The apprentice will work closely with our team of expert pastry chefs, acquiring practical and theoretical skills in the field of pastry-making. Main responsibilities:

1. Assist pastry chefs in preparing desserts, cakes, and pastries, following recipes and traditional techniques.
2. Collaborate on decorating and presenting products, ensuring an aesthetically pleasing appearance.
3. Maintain order and cleanliness of the kitchen, following hygiene and food safety standards.
4. Participate in managing ingredients, ensuring freshness and quality of raw materials.
5. Contribute to creating new recipes and ideas to expand the bar pasticceria's offerings.
6. Support the team in handling customer requests, providing a courteous and professional service.
7. Learn and apply advanced pastry-making techniques under the guidance of expert pastry chefs.

Requirements:

- High school diploma, preferably in culinary or hospitality-related fields.
- Basic knowledge of pastry-making techniques and kitchen equipment.
- Ability to work in a team and follow detailed instructions.
- Interest and passion for pastry-making and culinary creativity.
- Availability to work on shifts and weekends.
- Previous experience as a pastry chef/a, even if brief.

Technical skills required:

- Knowledge of basic pastry-making techniques.
- Familiarity with kitchen equipment.

The apprentice pastry chef/a starts the working day at early morning hours when the laboratory is still quiet. The first activity consists in preparing fresh ingredients for recipes of the day, ensuring that everything is weighed and ready for use. During the day, the apprentice collaborates closely with the head pastry chef and other team members to ensure that production proceeds without hiccups. Main responsibilities include preparing doughs, creams, and decorations, following recipes and instructions from the head pastry chef. The apprentice participates in daily meetings to discuss production plans and receive feedback on products produced. In case of problems, such as a cream that does not mount correctly, the apprentice is encouraged to propose solutions and learn from more experienced colleagues. Main tools used include planetary mixers, ovens, spatulas, and sac à poche bags. It is essential to have good knowledge of pastry-making equipment and basic techniques. Common challenges include time management and precision in measurements, but these are also opportunities to improve one's skills. The apprentice has the opportunity to learn new techniques and contribute innovative ideas, making the role stimulating and rewarding.
